Paneer rolls
Ingredients:
For filling:
- Paneer(cottage cheese): 1½ cup(finely chopped),
- Capsicum: 1 (finely chopped),
- Onion: 1 (finely chopped),
- Green chilli: 2 (chopped),
- Tomato: 1 (finely chopped),
- Chat masala: ½ tspn,
- Amchur(dry mango powder): ½ tspn,
- Black pepper: ¼ tspn,
- Salt: ½ tspn (or to taste),
- Red chilli powder: ½ tspn,
- Oil to fry.
For dough:
- Refined flour (maida): 2cups (250 grms),
- Ghee: ¼ cup (60 grms),
- Salt: ½ tsp (or as per taste).
Method:
Step 1:(preparing dough) Take a big bowl, add refined flour, ghee and salt in it and mix it well. Now add lukewarm water in small portions and knead stiff and tight dough. Keep the dough aside for about 20 minutes and cover it.
Step 2:(preparing filling) Heat a pan on flame and add 1 spoon oil in it. Add onion, tomato and green chilli and cook it for about 4-5 minutes or until onion becomes golden brown. Now add capsicum and cook it for 1 minute then, add chat masala, amchur, black pepper, salt, red chilli powder and cook it for 2-3 minutes. At the end, add paneer in it and again cook it for about 2-3 minutes. Now filling is ready turn off the flame and allow it to cool.
Step 3: Knead the dough once and roll out the dough with the help of rolling pin, keep it little thick. Cut into small rectangle or square shapes. Fill pieces with filling and apply water at one edge and roll it to make rolls and close both sides of roll so that filling doesn't come out. Rest rolls for 5-10 minutes.
Step 4: Heat oil in a pan and deep fry rolls on medium to low flame. Take out paneer rolls and cut them in small pieces.

Paneer rolls are ready to serve. Serve paneer rolls with tomato sauce or green sauce or any sauce or dip you like.
If some of the filling is left you can eat it just by adding tomato, sauce and chilli flakes. Better to cook filling in olive oil or desi ghee.
