Red sauce pasta

Ingredients:
  1.  Pasta: 2 cups,
  2.  Tomato: 4 (400 grams),
  3.  Oil: 2 teaspoon,
  4.  Salt: 1.5 teaspoon,
  5.  Ginger paste: 1 teaspoon,
  6.  Capsicum: 1 (finely chopped),
  7.  Basil leaves: 8-10,
  8.  Chilly flakes: ¼ teaspoon,
  9.  Black pepper powder: ¼ teaspoon,
  10.  Oregano: ½ teaspoon,
  11.  Tomato sauce: ¼ cup,
  12.   Mozzarella cheese: for garnish.                
Method:
Step 1: Put a pan on flame and heat 4-5 cups of water and add 1 spoon salt and 1 spoon oil in it. Then add pasta in it, stir occasionally and boil pasta until it become soft. Turn off flame and rinse it.
Step 2: Put another pan on flame and add 5-6 cups of water in it and let it boil. Now add tomatoes in it and boil them for about 6-8 minutes. Turn off flame, drain water and allow tomatoes to cool and then peel them and cut them into pieces. Grind tomatoes to make a tomato paste.
Step 3: Heat 1 spoon oil in a pan and add ginger paste and capsicum in it and slightly cook. Now add tomato paste in it and add basil leaves(break them), chilly flakes, black pepper powder, oregano and ½ teaspoon salt (or to taste), mix well and cook it for about 5-6 minutes. Then add tomato sauce and mix it properly. Red sauce is ready.
Step 4: Add pasta in red sauce (step 3) and mix it well and cook for 2-3 minutes. Pasta is ready to serve, turn off the flame. Now, transfer pasta in bowl or plate and garnish it with mozzarella cheese and serve.

Point to note: (about pasta boiling)Boiling time of pasta depends on the type of pasta. So it depends on which type of pasta you use. Like fusilli will take about 10 minutes and penne pasta will take about 6-8 minutes. So cook accordingly, cook till pasta becomes soft but don't overcook otherwise it will break.
(about tomato boiling): make thin cross cut before boiling so that it becomes easy to peal off. As shown in picture ➨
