Paneer pockets

Ingredients:

For filling:
  1.  Paneer(cottage cheese): 1½ cup(finely chopped),
  2.  Capsicum: 1 (finely chopped),
  3.  Onion: 1 (finely chopped),                                       
  4.  Green chilli: 2 (chopped),
  5.  Tomato: 1 (finely chopped),
  6.  Corn: 1 cup (boiled),
  7.  Chat masala: ½ tspn,
  8.  Amchur(dry mango powder): ½ tspn,
  9.  Black pepper: ¼ tspn,
  10.  Salt: ½ tspn (or to taste),
  11.  Red chilli powder: ½ tspn,
  12.  Oregano: 1 spoon,
  13.  Oil to fry.
For dough:

  1.  Refined flour (maida): 2cups (250 grms),
  2.  Ghee: ¼ cup (60 grms),
  3.  Salt: ½ tsp (or as per taste)
Method:
Step 1:(preparing dough)  Take a big bowl, add refined flour, ghee and salt in it and mix it well. Now add lukewarm water in small portions and knead stiff and tight dough. Keep the dough aside for about 20 minutes and cover it.
Step 2:(preparing filling) Heat a pan on flame and add 1 spoon oil in it. Add onion, tomato and green chilli and cook it for about 4-5 minutes or until onion becomes golden brown. Now add capsicum and cook it for 1 minute then add chat masala, amchur, black pepper, salt, red chilli powder and oregano and cook it for 2-3 minutes. At the end, add boiled corn and paneer in it and again cook it for about 2-3 minutes. Now filling is ready turn off the flame and cool it.
Step 3: Knead the dough once and roll out the dough with the help of rolling pin, keep it little thick. Cut into small rectangle or square shapes(you can also you cookie cutter to make shape of your choice).
Step 4: Apply water on the sides of rectangle shapes and fill with


filling and then cover it with another rectangle shape do same with others. Use fork to make a simple design on edges. As shown in pic ➨
Step 5: Heat oil in pan and deep fry pockets. Fry paneer pockets on medium to low flame.
 Paneer pockets are ready to serve. Serve paneer pockets with tomato sauce or green sauce or any sauce or dip you like.

If some of the filling is left you can eat it just by adding tomato, sauce and chilli flakes. Better to cook filling in olive oil or desi ghee. 
You can make any shape of your choice like heart, circle, star etc.
