Date and Tamarind chutney

Ingredients:
  1.  Seedless dates: 15-20(chopped),
  2.  Tamarind: 1 cup,                        
  3.  Cumin seeds: 2 tspn,
  4.  Fennel seeds(saunf): ¼ tspn,
  5.  Grated jaggery: 1 cup,
  6.  Red chilli powder: 2 tspn,
  7.  Black salt: 1 tspn,
  8.  Dried ginger powder(soonth): 1 tspn.
Method:
Step 1: Dry roast cumin seeds and fennel seeds till fragrant. Cool and grind to a fine powder.
Step 2: Heat a pan(non-stick). Add tamarind, dates, jaggery and 3 cups water. Cover and cook till the mixture comes to boil.
Step 3: Add red chilli powder, black salt, dried ginger powder and the spice powder. Mix well and cook for 6-8 minutes.
Step 4: Strain the chutney into a bowl.
Step 5: Grind the residue pulp with some water and strain again into the same bowl. Mix well. Chutney is ready to serve.
