Dhokla
Ingredients:
- Gram flour: 1 cup,
- Fresh curd: ¼ cup,
- Carom seeds: ¼ teaspoon,
- Lemon juice: 1 teaspoon,
- Cooking oil: 3 teaspoon,
- Semolina: 1½ teaspoon,
- Green chilly: 5-6,
- Chopped coriander: 1 teaspoon,
- Sugar: 2 teaspoon,
- Salt: ½ teaspoon,
- Turmeric powder: ¼ teaspoon,
- Eno: 1 teaspoon,
- Water: as required,
- Curry leaves: 8-10,
- Mustard seeds: ½ teaspoon.
Step 1: Take a bowl, add gram flour, semolina, curd and little water and mix it well.
Step 2: Now add 1 chopped green chilly, carom, 1 teaspoon sugar, salt, lemon juice, 1 teaspoon cooking oil, turmeric powder and mix it very well. Allow it to rest for half hour.
Step 3: Add 2 cup water in pressure cooker, place a stand in cooker and cover it with lid and pre-heat it on medium flame for 5 minutes.
Step 4: Now mix the batter and add eno and 2 teaspoon water in it and mix it.
Step 5: Take a mould and grease it with oil. Then, transfer batter in mould.
Step 6: Place the mould in pressure cooker and cover it with lid. Remove whistle from lid and cook it for about 20 minutes on medium flame.
For tadka:
- Cut chillies from center.
Step 7: Heat a pan on low flame, add 2 teaspoon cooking oil. Add mustard seeds, curry leaves, green chilly in it and cook it for 1-2 minutes. Add 1-2 teaspoon sugar and add ½ cup water in it and cook it for 2 minutes. Turn off the flame and allow it to cook.
Step 8: After 20 minutes take out dhokla from pressure cooker and allow it to cool.
Step 9: Take out dhokla from mould and cut it into pieces. Add tadka in it and leave it for 10 minutes.
After 10 minutes dhokla is ready to serve.

(you can check dhokla is cooked properly or not with the help of knife, insert knife in dhokla, if dhokla sticks to knife that means you need to bake it for more time if not that means your dhokla is ready.)
