Malai kofta

Malai Kofta

Ingredients:

For kofta
  1.  Gourd(lauki): 1(grated),            
       
  2.  Gram flour: 1cup,
  3.  Red chilli powder: ½ spn,
  4.  Salt: ½ spn or to taste,
  5.  Oil: to deep fry.
For gravy
  1.  Tomato: 2-3(chopped),
  2.  Onion: 1(chopped),
  3.  Green coriander: 2-3 spoon (chopped),    
  4. Milk cream (or malai): ½ cup,                 
  5.  Oil: 2-3 spoon,
  6.  Salt to taste,                                         
  7.  Red chilli powder: ½ spn,                                
  8.  Turmeric powder: ½ spn, 
  9.  Green chilli: 2(chopped),
  10.  Coriander powder: ½ spn,
  11.  Dry mango powder (amchur): ½ spn,
  12.  Asafoetida (hing): a pinch,
  13.  Cumin seeds: ½ spn,
  14.  Ginger-garlic paste: 1 spn, 
  15.  Garam masala: ½ spn, 
  16.  Dry fengreek leaves: 1-2 spn,
  17.  Water: 1 cup.                             
Method:
For kofta:
Step 1: Take a bowl, add gourd, red chilli powder, salt and gram flour in it and mix it well. Prepare a hard dough (if it is not hard then you can add more flour). Make small balls.
Step 2: Heat oil in pan, deep fry koftas and take them out.

For Gravy:
Step 1: Heat oil in a pan, add cumin seeds in it. Now add onion, tomato, green chilli, ginger-garlic paste and cook it. Cook for about 5 minutes or till cooked and turn off the flame. Allow it to cool.  Transfer this mixture in a grinder and grind it properly. 
Step 2: Again turn on the flame and transfer mixture(step1) in pan. Cook it for a minute or two and add red chilli powder, dry mango powder, asafoetida, garam masala, coriander powder, salt, turmeric powder and mix it well. Add milk cream in it and cover it with lid and allow it to cook for 2-3 minutes, add water in it.
Step 3: Add koftas in the gravy and cook it for about 5 minutes. Add dry fengreek leaves and green coriander leaves. Or cook it according to the consistency you like  but make sure you cook it properly. Turn off the flame and malai kofta is ready to serve.

Koftas are of many types but today I am uploading gourd's koftas. Soon I will upload other kofta recipes too. Moreover gourd is good for health.
